I decided to smoke the prime rib bones. It took 5 hours to perfection. Nice bark, tender meat. Also a wonderfully relaxing way to spend a Sunday hanging out in the backyard on a beautiful day. Made the neighborhood jealous with the aroma. This is a sure way to impress your crowd.
Excellent job by the butcher and no further prep, other than adding seasoning, of the ribs was necessary. (We cook beef ribs with the membrane intact.) Because the smoke outside was so bad, these were cooked in the oven at 275 (recipe Cooks Illustrated 2006). Lovely, true beef flavour, and just a bit of chew. Perfect! Thanks, Carver's!
